Confused Help just starting A1

What do i need to provide in my A1 file the two people i am dealing with are not the best i have no faith in them, I am doing NVQ in cleaning level 2
have time off work to do this at the minute and not sure where to start my observations have to be done by the end of the month, I am trying to video to help me.

If anyone has a file i could look at this would be useful or just list the contents to kick start me:
