It doesn't matter how 'simple' the observation appears, you should still be able to glean some information from it to evaluate it.
I presume the child was eating his snack?
If so, was he able to do this independendently? Did he follow your routine of disposing the apple core waste bin or compost pot? If so, he is familiar with rountines and can follow instruction?
Did he choose to join in with the singing or did he have a choice and chose his activity independently?
From your observation you should be able to see what stage the child is at (use your eyfs guidance pack) i.e. having a snack - he may be aware of his needs of when he needs to eat or is tired. He may be aware of hygiene routines because as he is aware that before eating he must wash his hands.
When you have evaluated your observation and seen where the child's progress is, you can then think of their next steps i.e. you may feel the child could be encouraged to be more independent by pouring their own drink. You don't need to feel you have to write reams of next steps; if it is a short observation you may be able to add the next step.
If it appears that child is doing just what they were doing (physically) last week, you may have noticed that their confidence is growing a little, so you can note that down.
Children often learn, and grow in confidence little by little at different rates, so as long as you are writing your observations down factually, you can't go wring.
