Hi if possible use any menus or meal planners that your setting uses as they'll have already of worked this out, and as such will be able to give you a good idea of what to do :)

If you work in england the eat better start better programme contains national guidance.

Page 2+ of the EYE level 3 handbook also contains much information about planning meals to meet government requirements - there's an image on this thread https://www.silkysteps.com/forum/showthread.php?t=20502 or search inside the amazon preview for nutritional requirements

There are also lots of google image suggestions to help with a menu layout - nursery menu
