snap I've just been doing this one too I wrote how the activities should stretch them but not to the extent that the goal is unachievable as failure may make them unwilling to try again, but success will give them a sense of achievement and enable them to go on to try other new things. Having high expectations of children, will encourage them to try to meet them. Otherwise they can become disheartened. Providing activities with low expectations the children may do only as much as they would have needed to. Also setting high expectations show that you value the children and give then a sense of worth.
