Default NVQ 2 ccld assessor is coming for the first time

Hello everyone,
Finally I've got an assessor and I should be happy, but she is already coming to assess me on Wednesday(never met her before) and she asked to write an assessment plan"something about health and safety" and prepare an activity on that. I'm so desperate now,that any little advise would be great on how do I write it,and what activity I could prepare(at the time she is coming,there will be about 4 children only,the rest will be sleeping).

Can some help me with this question as am confused on what to write.

How do you maintain the learning environment to suit the age and the needs of children and young people in your setting?
