You haven't mentioned any theorists by name, so I take it you have to choose 1,2 or a few?
have you got any simple (nice and easy to get a quick understanding at first) such as
'How Children Learn' by Linda Pound
in that you will be able to read up about about quite a few i.e.
Jean Piaget and his theory stages of development - you could look at schema . Chris Athey has a book 'Extending Thought in Young Children'
Margaret McMillan - her theory placed a great emphasis on the garden (outside) - you could link this to todays way of thinking - Forest schools and outdoor play in the EYFS you could look at
'The Outdoor Classroom' by Hilary Harriman.
There's 'A secure base' by John Bowlby - attachment theory.
'Scaffolding Children's learning' (Vygotsky and early childhood education)
Laura E. Berk & Adam Winsler

there's Erik Erikson and his theory.
i know it's hard to suddenly conjured up a book but there's
'Fifty Modern Thinkers on Education (from Piaget to the Present) by Joy A. (quite small print, not one to be read in a hurry)
The' how Children learn' give you a taster and an insight into theorists. Linda Pound has written up at least 3 or 4.
She's also written
'Contemporary Thinking and Theorists' looking at modern theorists such as Tina Bruce, Baraba Rogoff, Janet Moyles etc
Some of the above books are very reasonable on Amazon and you'll get one inside a few days - if you have a little time.
If not try googling what and who you need to research and it will least give you an idea of what is required from you. It's such a large subject, it's difficult to do the subject justice in a short space of time.
It may be better to concentrate on two say if you looked at Margaret McMillan, you could link in into the eyfs curriculum today and say why we have come round full circle to believing that outdoor play/learning is beneficial.
The other one you could look at is Piaget and schemas and look at Cathy Nut-Brown and Chris Athey and how we are now planning for children with schemas - what do you provide for children who like to transport? envelope? etc
Try and link whatever you have chosen to what and how the theory may be (or not) used today.
Then I'd do a quick (and brief) read up of a few other theories/theorists off the net, so you are able to undertand them better and at least discuss them, even if you haven't had time to write them up. It's much better to do a an indepth and good job on two that to spread your writing too thinly and end up with nothing decent to read or mark.
