Yuletide and Christmas no-cook biscuit puddings Vegetarian recipe idea Suitable for vegetarians
please adapt for vegan diets with dairy free butter, biscuits and chocolate.
 
Ingredients, tools and methods involved.
Making a no cook biscuit pudding
Pudding  Tools needed
red Small bowl & spoon per cook

red
Knife to chop cherries

red
A zip lock bag for crushing biscuits

red
Wooden rolling pin

red
Clear plastic film wrap

red
Cupcake baking tin / tray

red
Access to a fridge - cool storage point

Table top cold storage fridge

Pudding    Dry ingredients
Biscuit base for each individual pudding

  1 tablespoon of currants or mixed fruit
  2 glace cherries
  3 plain shortbread, digestive type biscuits or low fat and sugar biscuit crumbs.

Method ..
red   Break up the biscuits into crumbs and small pieces.
red   Chop the cherries
red   Add cherry pieces and currants to the dry mix.
--   Where a larger quantity of biscuit crumbs are needed place them into a bag and flatten gently with a heavy rolling pin.  




Pudding      Wet ingredients
Chocolate sauce for 4 puddings.
  4oz Milk chocolate - dairy free where needed.
  1oz Butter
  2 Tablespoons golden syrup

Method ..
red   Melt all the sauce ingredients together over a low heat.
red   Pour into a bowl for the children to serve themselves with a 2 spoonfuls of sauce.
red   Add this wet mix to the dry ingredients and stir to combine.


Making a pudding shape ..
red   Lay a piece of clear food wrap over a small cake tin indent and spooning the pudding mix.
red   Pull up the food wrap and gently twist at the top watch as the contained mixture forms a ball.
red   Place in a fridge for a few minutes to set.   

Pudding   Icing
Enough for 4 puddings.
  3 tbsp Icing Sugar
  1 Teaspoon of water
  4 red glace cherries

Method ..
red Mix together the confectioners icing sugar and water to a smooth paste.
red   Drizzle over the top of each pudding and position a cherry on top.
