Default Literacy Activity Assessment

So my 4th assessment needs to be an activity that promotes literacy. My placement is in a nursery for children with profound physical and developmental disabilities. We have quite a range of kids and we're all in one room children as young as 2 right up to almost 5. I have to find some catch all activity that they can all do but won't be too easy for the older ones.

In particular there's two 2 year olds that are almost complete blind with global delay and very limited movement. Also most of our children can't talk. Really stumped how I can come up with something that they'll all get something out of
