Not sure how much (or little) you have to gather, but your professional qualifications show that you have attained a level of professional development for meeting the children's needs . Certificates from continued training can show a time line of training.

You could include copies of planning meetings, plans, evaluation sheets and if you obtain consent from parents you can include observations, next steps and actual work (if not too big) and photographs of children (with consent).

Your manager may write up a witness statement for various things you have had to carry out for course and these can be used as well.
