as an interviewer I have asked to see a planned activity of their chosing (i would give a simple theme ie.autumn) and I look for things such as clear differentiation and suitability, but for me I not totally sure it's fair to expect a complete stranger to interact well without at least some prior knowegde of the children. I would however ask a candiate to come in for a session - then observe how they interact naturally with the children and staff on a more relaxed basis, and to be able to see if they use iniative etc
