Have got myself completely confused!! Is it better to bullet point the key features in these legislations and policies or go another route? Any guidance would be great!!!!

if it is an essay then you never bullet point, if it is a report you can. my students are expected to form complete and structured sentences using the professional terms listed in the appendices of their learning logs. At this level you should be constructing academic assignments, what does the question ask of you? if it an essay then no.
