Pumpkin Soup

Recipes that you and the Children can enjoy eating together..

Pumpkin Soup recipe

Pumpkin Soup

You will need

a Medium sized Pumpkin
3 small to medium potatoes
1 onion
1 pint of water .. with

2 vegetable stock cubes
approx 2 tsp garlic puree
2 Tbs worcestershire sauce
1 heaped teaspoon medium strength curry powder
Salt and Pepper to taste
add to the water and stir well
3 Bay leaves

Pumpkin flesh, pips and skin

Empty your pumpkin with a scoop and separate the inner flesh and pips from the more solid flesh.
Carve and decorate your pumpkin once empty.
 

 Peel and chop the potatoes, pumpkin flesh and onion.
 add to the saucepan
 Pour over the pint of stock with seasoning already added.
 Place the bay leaves on the top and add salt & pepper to taste.
 Simmer over a medium heat for about 30 - 40 minutes.
 Once cooked use a liquidiser or similar and blend the soup until smooth
 Dish up into individual bowls and serve with crusty bread rolls or as shown garlic bread.
